Phantom DAYTONA PARTY

Well...yesterday, was SUPPOSED to be the GranPappy's DAYTONA 500 party.  However, the NASCAR 'powers that be' (Brian France/Mike Helton?) decided to push things back a week.  Sooo...because the weather here in New York was a BALMY 43* and SUNNY, I decided to SHMOKE SOME SHTUFF.

Last week I received a bottle of limited-batch BBQ sauce from my friends at  SPICE OF LIFE CATERING, BOULDER, COLORADO.  There is a REASON why these folks have been voted BEST OF... in NUMEROUS COLORADO PUBLICATIONS!!
Dan at SPICE OF LIFE makes his own 'small batch' Sauce -- TYWBBQ thinks he should go BIGGER!!

I decided to SMOKE SOME LOAVES...using JEFF@SMOKING-MEAT.com's JALAPENO STUFFED MEATLOAF...WOW...it was AWESOME!!  If you do not receive JEFF'S monthly emails...you NEED TO GO THERE NOW!! and register for his mailing list!!  I have used his ideas many times.

JEFFS RECIPE walks you through the STEPS...I used my own RUB RATIOS and of course, A SPICE OF LIFE BBQ SAUCE in the meat mixture.  I used 3.5lbs. of #80/20 and 1.5lbs. of a beef/pork/veal meatloaf mix.  I put a jalapeno stuffed with cream cheese and cheddar in a square muffin tin.  Filled with meat then dumped out on foil.  Covered the top of the 'loaf' with more meat.

The bottom was extra meat that I put in a 'loaf' pan with holes in the bottom so the liquid would drain during the cook


I SMOKED THE LOAF at 240* until internal was about 165* and took them out and 'tented in foil' until the crew was ready.  
My buddy Kevin stated, "This MAY BE the best meatloaf I EVER had!!"  Hey, thanks, Kev, I respect a man who is 'lo-maintenance'

I ALSO cooked some RIB TIPS, which I had leftover from some St. Louis trimmings I did recently.

I rubbed those with some SIMPLY MARVELOUS SPICY APPLE  (STEPH of SIMPLY MARVELOUS REALLY hooked me up, more about that next time) and smoked for 2 hours before covering with ***CLASSIFIED COMPETITION INFORMATION TO FOLLOW***


Ready for the SMOKE...oh yeah, HAD TO stuff the extra jalapenos and smoke them for 3 hours

ANOTHER GREAT DAY OF SMOKE with BACKWOODS, BLUES HOG, SIMPLY MARVELOUS and A SPICE OF LIFE CATERERS.  More importantly, ANOTHER DAY SPENT with FRIENDS and FAMILY.  Life is too short to be miserable -- ENJOY EVERY DAY!

Oh yeah, I have to give a SHOUT to DAN at SPICE OF LIFE for also sending a STYLIN' HAT!! Thanks Dan!

DRUMMY'S DRY RUB - ALABAMA STYLE!

Our friends over at DRUMMY'S DRY RUB (give em' a shout on TWITTER: @Drummys_dryrub) sent us a sample for what DARTH BASTER coined RUB WARS!!  Their motto is "WE LIKE IT ON TOP!"


DRUMMY'S DRY RUB is created down in the PROUD STATE OF ALABAMA!! My mailman has been giving me bizarre looks as he hands over small brown envelopes postmarked from EVERYWHERE, USA!!

Yesterday, THE BEEF took DRUMMY'S out to the lab and smoked some yardbirds.

The BEEF immediately liked the uniform texture with subtle overtones.  DRUMMY'S held it's flavor well and created a golden hue on the 'birds

After a few hours in the smoke, and the wind, and the snow, (Hey, It's February in NEW YORK!) THE BEEF plated the birds and rang the dinner bell.  NOW, I asked BEEF where are the pix from the table!!?? 

Umm...SORRY, GranPappy but the BIRDS DIDN'T LAST THAT LONG!!  The family LOVED THEM!  The Mrs. commented that DRUMMY'S was near the TOP of her rating scale!!  THAT is impressive!

OTHER THAN, their QUALITY RUB, another thing TYWBBQ LOVES about this company is their support for AMERICA'S MILITARY VETERANS.  "Drummy's Dry Rub supports America's Heroes Enjoying Recreation Outdoors (A HERO), which serves America's wounded veterans by providing fellowship and mentoring opportunities through outdoor recreational activities."  If THAT is not reason enough to buy this rub, I don't know what is!!??


Final Analysis: "Hey DRUMMY'S! TYWBBQ ALSO, 'LIKES IT ON TOP'!!" Well done.

Michael J. "Mickey" Sullivan (1944 - 2012)

Michael John "Mickey" Sullivan, 67, of Pearl River, NY died Sunday, February 5, 2012. Mickey was a general contractor for Sullivan Contracting in Pearl River. He was born April 23, 1944 in Nyack, NY to Leonard and Mary Edna Ryder Sullivan. He graduated from Tappan Zee HS in 1963 and lived in Pearl River for the past 35 years. Before that, he lived in Tappan, NY from 1944 to 1976.

Locally, he was an active member of the community. He coached Little League Baseball, Mighty Midget Soccer and football. He was inducted into the Tappan Zee HS Hall of Fame as a member of the 1961 Championship Football Team.

Mickey will be remembered for his valiant fight against the genetic disorder, Huntington Disease.
 
He is survived by his sons and their families; Daniel and Jennifer and TYWBBQ's  Michael and Dolores and his three grandsons, Michael, Shea and Dennis. He also is survived by his brothers, Connie, Brendan, Lenny and Pat and sisters, Googie, Eileen, Sr. Aggie and Sr. Ann. He is predeceased by his brothers, Hugh and Tommy who also lost their courageous fight against Huntington's disease.

SHEPERDS PIE...BRISKET style!

Needed to whip up a quick dinner for the family.  Had leftover brisket from the weekend.  HHmmm... we ALWAYS do BRISKET QUESADILLAS with the leftovers.  Figured I would make BRISKET SHEPERDS PIE!!

SO, quick n' easy.  That is, after you've spent 14 hours smokin' a brisket!!





Diced up the brisket..I did NOT USE THE BURNT ENDS!!
Yes, I know, you are asking, 'HOW IN THE H#LL can you have LEFTOVER BURNT ENDS!!??"  Anyway... diced the brisket.
Diced and lightly 'sauced'

Peeled and Boiled some SPUDS ..while they were boiling, I cut some carrots and gave them a HOT BATH in a colander (same pot as spuds) until they softened.  

Removed the carrots...gave some frozen corn a 2 minute bath...

SPUDS READY...added some HEAVY CREAM, BUTTER, SOUR CREAM, SALT/PEPPER, and a few drops of GARLIC JUICE from the bottle.

PUT IN OVEN AT 350.....30 minutes later....DONE!!!




I ONLY WISH I had some JALAPENO JACK CHEESE to melt on top.... shredded MONTEREY CHEDDAR will have to do!!

You KNOW it's good when an 8 year old girl says, "OH MY GOSH, Dad, this is SOOO good!!"

HAPPY PAPPY'S



Welcome to the world's most comprehensive How-To on making a FATTY!
Break out your notebooks, fire up your smoker and try to make it through half of this manifesto without salivating all over your keyboard! 

I ran into the website called Smoking Meat.com while looking up receipts to BBQ sausages and bacon for a supreme tasting appetizer.  I found the Fatty and they in-turn turned into a very good tasting snack.
Why Happy Pappy, my daughter stated “Dad your always smiling while cooking and eating the Fatty’s”, so she said “these shouldn’t be called Fatties but Happy Pappy’s!”  So my family goes by the name of “Happy Pappy”.  She truly loves the BBQ and food in general, she’s my BBQ test taster.  If it passes her muster, then it’s good!
The following is a combination of the fatties from the website called Smoking Meat and my adjustments throughout the years. 
Gather ingredients, Red peppers, Green peppers, yellow peppers, hot peppers, cheese (use a combination of Pepper Jack/ Mozzarella cheese or another type), Sour Cream, choice of Rub, Onions, stuffing/Chicken or Turkey, deli meats (Pepperoni/ Salami/ Ham), Bacon (1-pound is good for a Happy Pappy).  There are many combinations to be use for Happy Pappy’s.  I’ll discuss what has worked for me over the last few years and responses from my fellow BBQ members, family, friends and party goers.
