Amazingly, they didn't have any bison ribs at my local Shoprite so I had to go with basic beef. Normal smoke for me on the UDS with Ique 110 set up @ 250 for 3 hours. Foiled for another 2 hours applying sauce during the final hour.
The ribs pulled back great and were amazingly tender without falling off the bone! Perfect. Did some EVOO and salt spuds too for a bit over 2 hours. Below is the final product.
I was excited but super skeptical about the sauce. The recipe below is cobbled together from a posting on the texasbbqforum and from the Triple D video above. It came out amazing!
2 cups blueberries
1/4 cider vinegar
5 tbls sugar
3 tbls Dimples BBQ Sauce
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp cayenne pepper
1 squirt of honey
Simmer for about 1 hour then strain.
The sauce came out very thick and took a while to strain. I added about another 1/4 of water to it to cut the sauce. In retrospect, I would probably double the amount of water in the recipe. Give it a try and let me know what you think! Tomorrow we cook swine!
