2012 BBQ GAMES

In the spirit of the Olympic Games...Two legendary Pitmasters go at it in a BBQ Battle crossing racial, cultural, generational and geographic boarders!



TYWBBQ Associate PR-LOU and Junior Associate HURRICANE NATHAN decided to put their BBQ skillss to the test in a whole hog cook off!  The HURRICANE is more secretive than the CIA so we were not able to get many details about his cook other than this satellite  picture.
Luckily for us SWEET LOU was more than willing to spill the beans on his prep below.
The hog/cooker combo was purchased from SHOPLATINTOUCH.COM (seriously--we aren't kidding!) for a cool $200 USD or 2,627.38 Mexican Peso's!  As you can see above, the hog was not butchered at all upon arrival.  Luis and his cousin got busy with a hacksaw and chisel to butterfly that CERDO up real nice!
After butchering, our POZO MAESTRO rubbed the inside of the CERDO with a combination of achote, garlic, pepper, oregano, salt and canola oil.  He strategically injected the porker with some of the rub in a suspension as well.  
This type of cooker is designed for the coals to go on top of the meat to allow the heat to diffuse down without burning the cargo.  This size hog will take about 4 hours at around 300 degrees to finish up according to reports from the field.  We will release the "AFTER" pics on twitter this evening before the medal ceremony.  If you would like to cheer your favorite Puerto Rico Barbacoa de Dios on at home, do so with his signature T-Shirt at the TELLYOUWHATBBQ STORE.

As for the other horse in this race...HURRICANE NATHAN blew through the judging stand and engulfed everything in his way--including the whole hog! It would appear that the GOLD MEDAL is PUERTO RICO'S to lose this year!  ARRIBA!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
